Healing Foods - who knew beans were so good for you?!

They are considered a "miracle" food and here's why!

  1. Bob and I just got off a road trip and for a few miles, I was reiminising about growing up eating beans. Remembering Mother soaking them the night before and us eating them with onions and tomatoes. Other than the fatback she used, I still love them and make a big deal out of the soaking and the 2 minute boil that supposedly makes them less gaseous. Once I drain that water and foam, I slow cook them with some kind of broth and a variety of herbs. Doesn't get any better than that!

  3. Yes - a great food for diabetics!

    About growing up eating beans - isn't it nice to know that they were so healthy for us. I always thought it was more of an economic thing which it probably was but still!

    Plus, onions are also on the "healing foods" list so we were getting a double whammy of nutrition with the addition of onions!!
